Ingredients:


  • 2 cups all-purpose flour   
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup red wine (such as Merlot or Cabernet Sauvignon)
  • 1 cup fresh cherries, pitted and halved
  • Powdered sugar for dusting (optional)


Guidelines:


  1. Set the oven temperature to 350°F (175°C). A 9-inch round cake pan can be lined with parchment paper or greased and floured.
  2. Mix the flour, baking soda, baking powder, and salt in a medium-sized bowl. Put aside.
  3. Beat the softened butter and granulated sugar in a sizable mixing basin until the mixture is light and fluffy.
  4. One egg at a time, beat in, followed by the vanilla extract.
  5. Alternately add the red wine and the dry ingredients to the wet mixture gradually. Add the dry ingredients last, whisking just until incorporated. Take cautious not to blend too much.
  6. Once the cherries are properly scattered throughout the batter, gently fold them in.
  7. Transfer the mixture into the ready-made cake pan and distribute it uniformly.
  8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven.
  9. After letting the cake set in the pan for ten minutes, move it to a wire rack to finish cooling.
  10. If desired, dust the cake's top with powdered sugar after it has cooled.

Note: The same red wine used in the recipe goes nicely with this cake. Enjoy sensibly!
