Here's a classic recipe for a delicious coffee cake:
Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Streusel Topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
For the Glaze (optional):
- 1/2 cup powdered sugar
- 1-2 tablespoons milk
- 1/2 teaspoon vanilla extract
Guidelines:
- Set the oven temperature to 350°F (175°C). For easier removal, line a 9 x 9-inch baking pan with parchment paper or grease and flour it.
- To make the streusel topping, combine the flour, cinnamon, and brown sugar in a medium-sized bowl. Using a pastry cutter or fork, cut in the cold butter until the mixture is the consistency of coarse crumbs. Put aside.
- Beat the softened butter and granulated sugar in a sizable mixing basin until the mixture is light and fluffy.
- One egg at a time, add them, beating thoroughly after each addition. Add the vanilla extract and stir.
- Sift the flour, baking soda, baking powder, and salt in a separate basin.
- Add the dry components to the wet ingredients gradually, starting and finishing with the dry ingredients and alternating with the sour cream. Take care not to overmix; only mix until barely mixed.
- Evenly distribute half of the batter into the baking pan that has been prepared. Over the batter, distribute half of the streusel topping.
- Evenly distribute the leftover batter over the streusel layer using a spoon. Sprinkle the leftover streusel mixture on top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven.
- After letting the coffee cake cool in the pan for ten or so minutes, move it to a wire rack to finish cooling.
- If you'd like, make the glaze by blending the milk, vanilla extract, and powdered sugar until smooth. Over the coffee cake that has cooled, drizzle some glaze.
- Cut, arrange, and savor while sipping steaming coffee!
You can have this coffee cake for brunch, breakfast, or just as a delicious treat at any time of the day. Have fun
