Classic Fruit cake Recipe

Ingredients:


  • 1 cup (240ml) unsweetened apple juice
  • 1 cup (200g) granulated sugar
  • 1 cup (225g) unsalted butter, softened
  • 4 large eggs
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups (300g) mixed dried fruits (such as raisins, currants, chopped dates, chopped apricots, and candied citrus peel)
  • 1 cup (150g) chopped nuts (such as walnuts, almonds, or pecans)
  • 1/2 cup (120ml) dark rum or brandy (optional)

Guidelines:

  1. Set oven temperature to 325°F, or 160°C. A 9 x 5 inch (23 x 13 cm) loaf pan can be lined with parchment paper or greased and floured.
  2. The apple juice should be heated in a saucepan over medium heat until it begins to simmer. Take off the heat and mix in the sugar, stirring until it dissolves. In the heated liquid, add the butter and let it to melt. Allow this mixture to cool a little.
  3. Lightly whisk the eggs in a large mixing basin until frothy. Stirring continuously, gradually pour in the apple juice mixture that has slightly cooled.
  4. Sift the flour, baking powder, salt, cloves, nutmeg, and cinnamon into a separate basin.
  5. Stirring until just blended, gradually add the dry ingredients to the wet mixture.
  6. Once the chopped nuts and mixed dry fruits are evenly distributed throughout the batter, fold them in.
  7. Stir the brandy or rum into the batter until well mixed if using.
  8. After the loaf pan is ready, pour the batter into it and distribute it evenly.
  9. Bake for 60–75 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven.
  10. After baking, take the fruitcake out of the oven and allow it to cool for ten minutes or so inside the pan. After that, move it to a wire rack to finish cooling.
  11. You might choose to add more flavor to the fruitcake by brushing it with extra rum or brandy once it has cooled.
  12. The fruitcake should be kept at room temperature in an airtight container. Before serving, let it sit for one or two days for the finest flavor.
